Fats, Oils, and Grease (FOG) are by-products that homeowners and food service establishments (FSEs) must continually manage. FOG poses a significant challenge because even a small quantity can lead to sewer problems, such as blockages that may result in a sewer overflow into your home, yard, or business.

The EPA’s  2004 Report to Congress on combined sewer overflows (CSOs) and sanitary sewer overflows (SSOs) identified that “grease from restaurants, homes, and industrial sources are the most common cause (47%) of reported blockages. Grease is problematic because it solidifies, reduces conveyance capacity, and blocks flow.” To limit these incidents, the City of Tracy works with all food establishments, including restaurants, professional kitchens, and industry.

Tracy Municipal Code 5.24.180 requires waste dischargers to provide grease, oil, and sand interceptors in restaurants, buildings with cafeterias, and service stations whenever, in the reasonable opinion of the City, such measures are necessary for the proper handling of flammable wastes, sand, grease, oil, or other harmful substances.

When installed, all grease, oil, and sand interceptors must be maintained continuously and efficiently by and at the discharger's expense. The discharger shall maintain records of the cleaning and maintenance of the grease interceptors, including receipts from the company performing the maintenance. These records shall be made available to the City upon request.
